AOI by KAIYO Opens at K11 MUSEA, Serving Interactive Japanese Dishes and Premium Ingredients at Accessible Prices

A new Japanese izakaya has landed at K11 MUSEA. AOI by KAIYO, the younger offshoot of Gaia Group’s KAIYO, opened August 20 with a menu spanning over 100 dishes across 20 categories — from sashimi and creative sushi to charcoal-grilled items, tempura, and Kansai-style sukiyaki. The concept is designed to feel more casual and approachable than traditional fine dining, with interactive dishes, hands-on assembly, and tableside engagement.

The menu is spearheaded by Kiefer Ko, Director of Research and Development at Gaia Group, who envisions AOI as a youthful twist on the KAIYO experience — one that caters to diners seeking quality ingredients, accessible pricing, and a lively atmosphere.

Signature dishes include the Caviar Jewelry Box series (from HK$198), where guests top sushi rice with caviar, salmon roe, and seafood, or wrap them in crispy nori. The Crystal Cups series offers single-serving portions like Abalone & Liver Sauce Crystal Cup (HK$128) and Double Caviar, Uni & Toro Crystal Cup (HK$148). The Jumbo Nori Taco selection includes Premium Uni, Caviar and Toro Sushi Napoleon (HK$138) and Signature Jumbo Prawn Nori Taco (HK$138). The Premium Seafood DIY Wrap Set (HK$198) lets guests assemble their own bites.

Hot dishes include made-to-order tempura sets from a chef with over a decade of experience, Kansai-style sukiyaki from HK$168, and kamameshi pots like Foie Gras Kamameshi (HK$198). The Salmon Sushi Cake (HK$168) offers a showstopping centerpiece for celebrations.

The interior, designed by Gaia Group, features clean lines, natural timber, and suspended illuminated artworks depicting Japanese seascapes. An open sushi bar lets guests watch chefs at work.
