Chef Levi You Brings Modern Fujian Fine Dining to H Queen’s

Chef Levi You, a Zhangzhou-born chef with nearly two decades of experience, has opened Hokkien House at H Queen’s in Central. The restaurant marks his first solo venture, bringing modern Fujian cuisine to Hong Kong’s fine dining scene.

You’s culinary journey began early—he learned to cook at age eight, growing up with the home-cooked dishes and street snacks of Fujian. After training across Shandong, Huaiyang, Sichuan, and Fujian cuisines, he studied under celebrated Fujian cuisine master Wu Zhiqiang. He later became Executive Chef of Lucheng at Conrad Xiamen, where he developed the menu from the ground up. In 2025, Lucheng Xuan received Michelin recognition, and You was awarded the inaugural Fujian Michelin Guide Young Chef Award.

A nationally certified Class-1 Chinese Cuisine Chef, You has also cooked for high-level state occasions, including a dinner during the 9th BRICS Summit and a banquet for a delegation of foreign ministers from four ASEAN countries.

At Hokkien House, You revisits the flavors he grew up with and presents them in a contemporary fine-dining setting. His philosophy is simple: “You need to understand your ingredients first, and respect their natural flavor. Cooking used to be about addition. What we do now is subtraction.”
