Tokyo Confidential’s Holly Graham, Author of Cocktails of Asia, Takes Over Palm Court Bar With Masterclass and Guest Shift

Tokyo Confidential founder Holly Graham is bringing her boundary-pushing cocktail style to Hong Kong for one night only. On July 25, the acclaimed bartender, spirits journalist, and author of Man Mo Media book Cocktails of Asia will host an exclusive masterclass and guest shift at Palm Court Bar in The Langham, Hong Kong.

The takeover marks the overseas debut of Tokyo Confidential’s new menu theme, “Konbini Confidential,” which reimagines Japanese convenience store ingredients in unexpected ways. Graham will collaborate with The Langham’s head mixologist Hinata Chang on a four-cocktail menu.

The lineup features two drinks made with Langham Gin, a premium spirit crafted with locally sourced raw honey, ginger lily, and Chinese jasmine tea. The Celery Man combines the gin with yuzushu, ume, celery soda, and citrus. Always Sunny in Azabu blends mikan gin, mikanshu, yakiimo shochu, and Grand Marnier. Caramel Corn Sidecar mixes Rémy Martin VSOP with vodka, strawberry mistelle, almond caramel, and lemon. Chang’s Green Gambit pairs strawberry gin with basil dry vermouth, yuzu honey, salty matcha, and dark chocolate.

The masterclass runs from 6:30pm to 7:30pm, offering an intimate session where Graham will live-craft two drinks using Langham Gin. The guest shift follows from 8pm to 10:30pm, open to walk-ins.

The event comes just days before the Asia’s 50 Best Bars 2026 awards ceremony on July 28. Tokyo Confidential ranked 70th on the 2025 list.
